About Our Instructor:
Dr. Ryan Cox currently serves as Extension Meats Specialist and Associate Professor in the Department of Animal Science and the Department of Food Science & Nutrition at the U of MN. In addition to his roles in extension and research, Ryan serves as the faculty coordinator of the Meat Science Laboratory. Before joining the faculty at the U of MN in 2008, Ryan received his B.S. and M.S. degrees in Animal Science from Auburn University and his Ph.D. in Animal and Food Science from the University of Kentucky.
